Abstract
At the national level, the public Educational Units receive the food input from the Ministry of Education, which is received, stored, and distributed to each of the students, as they are perishable products, the warehouse must be adequate in accordance with the ARCSA Agency regulations. National Regulation, Control and Sanitary Surveillance that specifies the conditions that the food input needs to avoid possible deterioration or damage. The objective of this research is to analyze the storage and what is its incidence in the dispatch of food supplies. With this purpose, the research question is the following: How does storage affect the dispatch of food supplies in the Mariano Aguilera Educational Unit? In this way, an analysis has been reached where the Educational Unit must reach a stricter responsibility, to prevent further deterioration of the product. The research question is answered through surveys of internal and external clients, and an interview that was carried out with the highest authority of the educational establishment, the results obtained by those involved show that there is no adequate formative knowledge about the adequacy of the warehouse for the storage of food supplies, which shows that the product is in danger of contamination. It is recommended that the adaptation of the warehouse be carried out, solving what is causing the deterioration of the product, and for this adaptation there are laws, regulations, strategies, manuals, among others.
